Hygiene Audit Of Kitchen

Hygiene audit of the kitchen involves collecting representative samples from various sites in the kitchen / food processing area namely cooking area, bakery, washery, cold rooms, chopping boards, cutlery, juicers, butchery, veggie washing area etc. personnel hygiene samples are also collected. Samples are processed in the laboratory to quantify / detect the microbial load and based on the contamination level hygiene score is allotted.

Testing procedures are as per the International standard guidelines and results are communicated to you in a standard reader friendly format. Counts are expressed per gram or per ml of the sample.

Qualitative detection of Salmonella (typhoid causing bacteria) is also carried out.

The objective of the hygiene audit is to help the management achieve high standards of food safety and to keep a track of clean food handling practices.

Our staff will visit the location for hygiene audit and also collect the food samples and carry along to the laboratory. All the samples will be checked for following parameters.

Food sample testing involves collection and microbial analysis of representative food samples. We recommend 8 number of samples for testing.

Relevant food samples cooked and raw, ingredient samples are collected from the kitchen in sterile containers and processed in the laboratory to find out the load of relevant microorganisms to verify the food safety.

Water And Ice Testing

Potability testing of drinking water samples and ice cube samples is carried out by membrane filtration technique to enumerate E. coli and other non- coliform bacteria in the sample.

Drinking water samples from drinking stations are collected and tested for the presence of coliform and non-coliform bacteria which happen to be hygiene indicators of drinking water. Two samples of water and one sample of ice cubes will be collected.
